I don’t remember what mods you’re doing. With no chip, you probably won’t see +24psi that would set SES. If you have a chip with good tuning, it won’t set SES light. If you have a chip with ‘poor tuning’, the SES light will come on for awhile after you exceed +24psi - not the end of the world.
There is a small group who believe that the boost foolers ‘protect’ the MAP sensor, but 1000’s of us have been showing the MAP sensor 30, 40, and even over 50psi for YEARS without damage.
The port on the 5-way plenum gets a vacuum plug and a tiny zip tie to hold it on. The hole in intake tube for green hose gets a screw/bolt.
I did the same. The bolt in the intake tube got a dab of RTV around the head to make sure it stayed in place and makes a good seal.
I got tired of replacing the vacuum cap every so often (it gets hot under the hood so eventually dries out and cracks) so ended up converting the port into a 1/16" NPT cap:
Hey ya'll,let me say first that I value ya'lls opinions. My 7.3 has nearly 300k on it and I have it torn down to the bare valley,heads,plenums and valve covers. I would like to ask if ya'll think,while I have it down this far,should I pull the GP's and injectors (OEM) and replace GP's and have the Injectors rebuilt? Thanks in advance for your input.....

You can test the GP's with a multimeter to see if they are still functioning. You can also pull one to verify they are of good quality.
As for the injectors, don't fix it until it breaks...
