Unfortunately, I was going to say $3k for a rolling chassis too. The cost factor is the motor as you stated. A sane man would have walked away from the project I have now, I'm 7 years past what was my normal 10 years dump point. The economical way of salvaging your truck is to try to guess into a good salvage motor for $3500 that can be installed and the truck used for a while or sold running.
The wave we are about to hit too is Ford is no longer keeping parts in inventory, things are starting to show up discontinued. Critical things too, like engine and transmission harnesses. Not a part with brittle insulation you want a salvage monkey to yank out of a vehicle.

What do we need to start hoarding and I don't mean TP. :

That's hard to say. We're 17 years out from the 6.0 launch, 13 years out from th last pickup, 10 years for the Econoline. In my auto supplier career, 10 years was about when we were freed from the contracts to supply. For us, we would start to not replace tools and dies as the contract term neared, down to about half at the 5-year last production point. We might have even inventoried one or two years of the contracted parts just to clear production equipment. With the contract freedom, some suppliers are now then open to see the OE line as aftermarket. So some parts may be OE grade or slightly lower tolerance, others might come from an "OEM" but in reduced quality because the aftermarket sources don't want to pay the OE price level. If the OE harness supplier owns the tools (and some tooling like our OE was actually paid for and owned by Ford) we should see some aftermarket kick up.
But that's a tough call. Right now there are some complaints that the in-tank foot from Dorman and other aftermarket suppliers are not holding up to diesel. They back-engineered the design, but not the formulation that well. As with any aftermarket, they may adjust if the sales fall off. Or not. Bismic has a dealer report (ANWB) that the OE feet are on extended backorder. Some Ford dealers are saying it's discontinued. I just got a dealer to find one at a remote dealer and they are shipping it to me. It's a part I don't need right now, but it will be on my shelf. But you can do alternatives, sumps or Hutch if we need to.
The harnesses I not too worried about for me. I've built harnesses for early Mustangs, the ones for the 6.0 are just more wires. And we can get the connectors (for now) if the ones we have are broken. It would be a huge task, but on the aftermarket side, the cost of these OE is so high I would expect someone like Dorman or others to develop a replacement. Again, as good as OE??????

In the restoration world American Autowire makes a good product. With the popularity and collect-ability of Excursions and diesel pickups I can see them jumping into the market. NPD also carries stuff for vehicles that are "late" model if they ate popular like the 97-04 F150s. Chinese made body panels are always a problem but after this virus I am going to bet many products are going to be made onshore and hopefully they will be a better quality.
With Chevelles I can buy most anything after market with the exception of some items but OEM is still the best quality.
I’ve been waiting on a Oem battery to battery connection for about 1 year , every ford dealer from west coast to East coast are all on back order , even summit racing was out , being an Electrician I fixed it the way I thought it would be better , I steered away from the Ford stock engine , because ford only put stock back in , No upgrades , you would have thought they would have learned by default and law suits , and came out with a better solution at a fix, Nope they washed their hands of this engine and sale more parts for it, if it’s not discontinued .

That was one of the first to seem to get lost. After my truck is back together I'm going to install and test my optimal 2 solutions, factory battery locations, and frame rail.
