Good morning all! Started my day early (2:30) with a county sheriff request to come get a rolled over car. Driver walked away. Enterprise rental car. Totaled Kia.
I just wanted to let all of you know that John (powerstroke72) his wife Jamie suffered a severe heart attack yesterday. She is doing much better today. They still have to do some extensive testing to determine the extent of the damage. He has sent me a text last night and we talked a bit today. I am letting all of you know this with John's blessing. Please keep Jamie, John and his family in your thoughts and prayes as they travel down this tough road.

If there is one good thing that can be said about this situation is that Jamie survived the attack, and that the medical technology these days for heart disease is very well established.
It's been caught and with some lifestyle changes, plus whatever else needs to be done, there is no reason Jamie cannot live well into her 80's.

My BIL has had two heart attacks now and he's only 46.
For him it was all in how he treated himself. (WAY too much beer and cigarettes, along with being very overweight.)

The red ones are Fresno peppers and the green ones are those little Thai chilies.
Roast the peppers like this.
Get two ears of corn, wrap them in foil and bake at 400 for 45 minutes.
Don't boil them, it will rinse all the flavor away.
One large red onion.
5 cloves of garlic.
One lime.
1/3 teaspoon of grated fresh ginger root.

I use a 1/2 gallon canning jar, but any container will work.
Cut up the peppers into little tiny pieces.
Cut the kernels from the corn and add to the jar.
Same with the onion, garlic.
Zest the lime into the jar.
Then take the lime, cut away the skin and chop the fruit up into little tiny pieces and add to the jar.
Grate the ginger into the jar. Go easy on the ginger, if you add too much it will overwhelm the flavor. You can always grate a little more in later if you want to.

Ok now for the broth.
1 cup Apple Cider vinegar.
1/2 cup sugar.
1 cup of Fish Sauce.
This stuff is my favorite.
Heat the solution in a sauce pan until it boils, then pour it over the ingredients in the jar, close the lid and shake it all together.
You'll end up with something that looks like this.
Let it sit at least 12 hours before serving.
