As promised, tonights offerings were Smoked Yellowtail with a cajun/smokey chili seasoning, fresh baby summer squash from the Cal Poly Pomona(my alma mater) Farm Store with jalapeno bacon and red onions, and some angel hair pasta with a herb basil alfredo sauce.
And yes, the Yellowtail was caught by me.
A couple dishes I forgot to post from last weekend when I went home. The restraunt is at the Calexico airport, pretty much a hole in the wall and you'd probably never find it unless you knew someone that had been there. Homemade shrimp ceviche that was out of this world and Carne Asada nachos.
Tri-tip seasoned with Lowery's, garlic powder and fresh, chili powder, a lil cayenne, and black pepper and then marinated with Jack Daniels, Worcestershire, a lil lime juice, splash of Tabasco. Tri-tip was smoked with mesquite briquettes(didn't have any lump), and some raw hickory chunks.
Can you say, smoke ring?
I picked up some medium sized squash from the local colleges farm store for $0.10 a piece! Cooked 'em up till just tender and then stuffed them with onions, mushrooms, bacon, garlic, and the inside of the squash!
Alright slackers! Since none of y'all are keepin this thing going, its time to make you hungry again. First time I've done this and it needs a lil more seasoning next time, although, I do enjoy the fresh taste of the vegetables without a ton of other stuff in there.
Chicken corn chowder with potatoes, red bell pepper, diced jalapeno, red onion, chicken, heavy cream and milk, okra, and fresh corn straight off the cob, not the frozen or canned variety!
