My wife just finished making over 20 dozen Christmas tamales. She uses just a light amount of masa and lots of innards, making cheddar cheese and Hatch, New Mexico chillies, chicken/chillies, beef/chillies, and pork with of course, more chillies.
I had to throw out 10-15 cans of special mixins I've never heard of that helps makes them special.
Since I "Have" to be the official tester, I ate one of each.
It was a tie so I had to eat another just to be sure of the winner.
I'm saving my opinion for yet another round this week.
I think my wife is figuring me out but it's a tough decision.

This was Pronghorn Antelope, not strictly venison, but the same taste in my opinion.
Wild game is good for you. We have it at least once a week, most weeks. Mix in a little trout here and there, when we can get to the Sierra's to catch some. We're not much for fancy restaurants, but I'm not complaining.
Special Quesadillas are definitely one food item I miss from home. There just isn't anything in the world like them. I made sure to have one while we were visiting for Christmas!
