EGTs are also higher than before. Just started watching them this morning. At 60mph I would see 580-600 now I'm seeing 750-800. I drive the same stretch of road every day. 20 miles each way most are straight flat. So I remember what boost the truck runs, EGT temp, oil temp, coolant temp and what point on my trip that my truck hits operating temp. I noticed the first day when something was off. I was told that low fuel pressure would cause boost to drop off. Any chance thats the cause. The only check engine light I get is one for low flow on the egr.
But the data shows it hit more than 20psi. Several times in the video it showed 24 and 25 psi and the data showed the same thing, more than 20psi several times. My truck only holds the high boost for a few seconds and then starts to drop fast.
Have you tried the tune since replacing the turbo?
Was the 28psi before doing an EGR delete?
You should really never see 15% VGT, 20% is more like it.

These higher EGT's you noticed after the new turbo, correct?
As Randy mentioned being deleted, often guys post lower boost numbers. I can't hold 26every long, and 24 to 25 is more common WOT.
I don't know low fuel pressure is the issue, unless the pressure is so low you are starving the engine and if that is the case you have other issues which don't appear to even be an issue.

Have you checked the pressure? I don't think that would cause it, boost is air flow. I will say that higher EGTs are a sign of more fuel or un-burned fuel. Which turbo did you buy, stock?

I wished we lived closer together!
With the tune it runs the same gutless. The EGR was replaced when it was studded 7 years ago.Been running Matt's tow tune since. Still hits 20 psi now tuned. Before the problems started it would hit 28psi.
So if I'm stock tuned and hitting 38 psi I should be getting a code and I'm not never had any codes on the truck except one for EBP( and I had a thread on here about that) a couple years ago and one for EGR low flow every time I run stock.
Noticed Randy's comment about TorquePros communication speed. Doubt this will make a difference but may help data logging if you don't have this option checked already. May not work with some Bluetooth adapters. Hope it'll help this head scratcher!

I think somewhere back in the thread you said yes or no to Kat and muffler being gone?
If not you could try a "test" pipe for the kat to see if it's plugged up. Also no mater if
you do or don't. How is the exhaust pipe looking ie dents or crushed spots or something stuck in the pipe?
