How would one know if 125lbs isnt actually 120 or 130?
Just thought Id have mine checked.
they generally use a fixture with a few different torque settings on it to check accuracy. pop the wrench in the fixture and turn it to a specified setting and see if it matches what it should. the fixtures get sent out to a specialized company that calibrates them every so often to keep some continuity in testing.

i've never heard the whole story of your demise, and i don't expect you to air your business here, only weirdos like me and tom do that all i know is you took over the family business, the economy tanked it even after you made record profits, and somewhere along the lines you did something that resulted in your back becoming an erector set.

if in doubt, i check it against a few others.
if the others all read one thing and mine don't, i call mine off.
I have a socket I can put on a half drive and is 8pt 1/2 onthe other then just check against a beam type torque wrench and see where it clicks (beam types are more accurate but harder to work with obviously)
If your doing a lot, as Dan mentioned you can buy a fixture deal for checking and calibrating. You change it by the screw in the end of the handle.
Of coarse they start around $2k
Or you can send it to any of the dozens of labs that do it. Here is just the first one that popped up
