So "Building My Own" models, the differences I only see for a $6K difference in price is:
-Leather on the Lariat vs. Cloth on XLT
-Heated AND Cooled on the Lariat
-Sony stereo on Lariat
-Black interior on Lariat
I can option them up the same except for the above, and the XLT is $6K less! Does that make sense?
Now I typically don't like Ford leather (German leather is the best), but I have kids so it's always nice to be able to wipe off the seats when needed.

I think the Lariat may have some external cosmetic features as well. If all you care about is what you've listed, get the XLT. I suspect that the main reason for the upcharge to Lariat is all the other package options it opens for you. By doing it that way, the added packages feel like less money than they really are. Just my opinion, anyway.
Lariat has dual climate control. XLT only has a single adjustment. May not seem like much to some, but my wife and I are rarely the same temp. In the summer she stays cooler, and in the winter she gets colder. Dual climate control makes for many, many less arguments and a happier wife
- LED headlights (a big one for me)
- Heated rear seats (a big one for my wife to prevent "other" passengers' whining)
- Power running boards (another big one for me RE off roading)

Yeah I'm losing that going from my silverado to the new truck. Gonna add heated seats aftermarket to keep the S.O. from freezing in MY climate.
The big difference is leather v cloth. The cooled seats are basically worthless. The heated seats in the cloth equipped XLT get much hotter than in the leather Lariat seats. The reason is that the Lariat heaters blow warm air through the perforations while the XLT heaters use a resistance wire grid under the cloth, like a toaster.
XLT in this generation is like the new Lariat. You can get heated seats, navi, moonroof, Sync 3 with 8 inch screen and backup cam, 110v outlet, etc. Yes, you lose out on the dual climate and Sony radio, but the standard climate and audio systems in the XLT are definitely improved over last generation. The only reason I ordered a Lariat (Ultimate) is to get the LED headlights. Stupid how a base model $31k Explorer comes standard with them, but a Super Duty twice that price has to buy $5k in options to get them.

I have sat on cooled seats in a Dodge and they were pretty awesome, are Ford's version really not that great?
I had them in my 2015 Lariat and still have them in our 2010 Lincoln. In the truck, the seat base would get cool but the back rest never cooled. So much for blowing the sweat off your back. The Lincoln seats also only seem to work so-so. Maybe the new version is better.

If you could spend $1K to get the stock LED headlights that would be great but if I've got to get a Lariat Ultimate in order to get the LEDs, well . . . ok.
At least two of the trucks at the drive event today had the cooled seats. While it wasn't like sitting on a block of ice it was definitely keeping the seat back cool. You knew it was doing something given how warm the rear of the seat (I was in the back seat at one time) was.
My wife isn't a fan of leather because it makes her sweat, so the cooled seats are important to me if I'm ever going to get her out camping with me.
Both of our Lincoln's had/have the cooled seats and although they took a while to get working they both are almost too cold. Similar to heated seats they feel good at first but then go too far and both of us either cut them off or set to low. Once the cabin is cooled down just a little cool air is all that is needed, at least for us.
