With the impending weather coming our way, I've put a pork shoulder in a brine yesterday, and have it in the smoker right now with some hickory wood, and gonna throw a little peach in there too

I just pulled a twin pack of Spares out of the freezer and put in the fridge for either Sun or Mon.
May try hot and fast on these.
I've done pork ribs like that several times, with vary good results. Trying not to burn anything, I snagged a sheet pan (that is now dedicated for the grill)
and put my ribs on that instead of directly over hot charcoal.
I've got a rib rack that stacks them on their sideways between coals on both sides. I usually do them on the rack at 225*. This time I'm going for 325*.
