I like eggplant , several different ways to eat it , the best I’ve had was from Ali’s, it was almost like smoke pork taste , I asked our server what is that ( it’s really good ) she said eggplant , eggplant parmesan is probably my most favorite dish , Ali’s never did give up their secret,

My favorite way to cook eggplant is on the grill. I slice it into steak-like rounds about a 1/2" thick, brush it with some olive oil, and sear it until charred. It comes out tender and flavorful.
