I like using Romaine lettuce.
Avocado if it's not too expensive.
Creme fraiche or Greek yogurt, instead of sour creme.
Hand made corn tortillas from a local market.
The meat can be anything from leftover roast beef trimmings (the salty, peppery ends), leftover roast chicken, to leftover pork roast. Or some of that pre-marinated meat sold at Latin American Carnicerias. Sometimes it's just plain old New York steak.
Where I cheat, is Peking Duck taco. Flour tortilla steamed in the microwave (not traditional). Roast duck from Chinatown (not traditional). Shredded purple cabbage, green onion, and Hoisin sauce (again, not traditional). . If plum are in season, I make a plum sauce.
You can get through two of those?? wow. I could eat about a third and would be over-full. My other favorite place further down the peninsula was Rossotti's on Alpine, Menlo Pk area. back in the 80's we'd ride our horses over there and have lunch. Only place I know, besides Alice's that had a hitching post still for the ponies. Not sure if Alice's still has, but I know Rosott's does. Course name has changed, can't recall what it is now. been a minute since I lived down there.
two pounds ground ranch raised grass fed Beef
three Linguisa chopped up 1/8 to 1/4”
mesquite smoky seasoning from Costco
fry up linguisa untill crisp ,add chopped onion , add beef and seasoning , cook through out .
fry corn tortillas
grade up some sharp cheddar or Costco’s kingdom aged cheddar ( best)
shread up some Ruffage ,
choice of salsa , mines fire roasted green chili’s or Hatch 505 salsa from Hatch New Mexico ,just found at Costco.but been a fan for a long while.

Maybe I should give a bit more info about me? yeah, why not? So, I am retired age, but as mentioned in the forum intro thread, I am now working at a small repair shop. 'We' specialize in 4x4, but work on everything from Ferrari to Jeeps, and all years that are still running. One of the few shops left in the area that still knows how to rebuild a carb. (sad to think of that, actually) Anyway It's fun, no stress and I am loving it. Fun retirement job, at any rate. Course you would think I'd get all my work done there... well, we are so over-booked for customer work that it's really a challenge to get my vehicle looked at. Sometimes I can ask nicely and after 6pm may get some attention. So the good news is that we have way too much work, the bad news is that we have way too much work. Like I said, small shop, as in very small, but excellent work which is why we have too much to get done. Today we begin yet another tear down on an 05 5.4l F150, for instance. Two months ago we redid the timing on it (3 valve nightmare). It came back after 1500 miles, we think it's sucked a valve, but two cylinders are down. Finally got the ok to rip into it, so, that's on the agenda for today. Frankly can't wait to find out what the heck is going on with it. My blackwood has a 5.4l, not sure if it's a 2 or 3 valve. That motor's been solid as heck though, 218k miles on it.
I retired from my career in the computer industry as a software engineer in '14 after 40 years. (yes, I am a old 'chick') I got into computers because I got laughed at when I went to apply at GM training School in the early 70's. "You're a girl, what the hell are you thinking?" was the response I got. I'd been helping to build engines for many years at that point, but being a female wasn't a good thing if you wanted to work on cars. I thought if I had real training people might take me seriously. So, I thought if I couldn't work on cars, then maybe these computer things might be interesting. So I began my career repairing computer hardware back in the 70's when they took up entire floors of buildings and had about a tenth of the storage space our phones have today. One still got dirty working on computer hardware too, and greasy if it was a printer.

I grew up with cars, they are kind of in my blood. (Divorced parents) My Dad restored Aubruns, Cords and Duesy's. I grew up hanging around a bunch of old men working on these gorgeous classics. Helped my Dad on his own Auburn and whatever else he had at the time. At one point there were 12 cadillacs in his driveway. It was quite a thing to get one out, often had to move 6 to 8 vehicles. hahaha My Mom on the other hand liked "foreign sports cars" and had a '61 Alfa and then a '66 MGBGT. When I learned to drive (officially) I learned in the MG. We had a '67 Cougar at that time too.
As I have said previously, I am a Ford girl, it's my brand of choice. I've had the early Mustangs, even had two replica Cobras for a while (pic of my old garage). Have autocrossed them. Fords are reliable. Somehow a Ford will always get you home. Hmm, guess this should be over in the actual intro thread. oh well. hi guys!!

Somebody should open a restaurant to feature whole roasted beast. Maybe they could spit roast a few different types of animals. Suckling pig. Kid goat. Spring lamb. Buffet style. All you can eat salad bar. All you can eat roast meat. Casual no dress code. Live band. Would you pay for that? How much would you pay for that?[/QUOT

First moisture in awhile always gets a little slippery.
Some guy in a white pick up, spun out on I-280 near Farm Hill. Traffic backed up past 84, almost to Sand Hill.
Wasn't me. I drove right by in my white pick up. CHP on the side of the road gave me a dirty look like I owed her child support. I get a feeling that cop remembers the "lifted white pick up, bright off-road lights" radio broadcast from the last time. There's a traffic stop and polite conversation in my future. I'll let you guys know if that CHiPs babe punches my dance card.

well Guys , for now Ranch work is done (
) at least the hydraulic hose leak is fixed , I get to head down to the Bay Area and bid a project , I don’t normally go that direction ,but it’s for the Elderly so I’ll go. I just hope when I’m OLDER somebody will come , and not try and talk me through it on the I phone, is it just me or are the nights getting colder , I got up three times and looked at the Thermostat, 70 deg , bumped it up to 72 , felt like 35deg in here , could of swarn I seen my breath and a couple cows hanging next to me.
