I could easily be wrong. But I doubt the truck was not running a tune/program with all those other mods done by the previous owner. The tranny could be shifting firmer from a Valve Body upgrade in the tranny or by the program. Don't worry about the program, most generic off the shelf tuners increase the line pressure in the tranny which is not good for the long run. It's better to adjust the shifts mechanically, i.e. valve body/shift kit.
If the truck runs high EGT's with the edge removed I would be suspicious that the PCM was flashed/programmed. Even though there might not be a chip present on the front end of the PCM doesn't mean it hasn't been reprogrammed. A stock program will not run high EGT's or blow smoke unless there is a boost problem.
How did the truck run with the edge removed? A stock program with those size tires should have been pretty sluggish since stock the 7.3L is around 220 hp.
