Will do Tim. Biggest thing with brisket is it needs a low heat. I usually smoke around 175 to 200 degrees for 14 hours. Also it needs to stay moist so I use a mop sauce in concert with a good dry rub. For smoking I use either hickory or mesquite for brisket. Also a good fat cap is needed. Typically 1-2 inches thick. I smoke fat side up so as the fat melts it goes into the meat and flavors it and keeps it moist. Then let it rest for at least 15 minutes to lock in the moisture and the flavor.

Will do Tim. I used a basic dry rub recipe I found on the internet and added to it to suit my taste better. The mop sauce I also found on the internet and tweaked it. The mop sauce also calls for a 12 ounce beer. Bought a 16 ounce Sam Adams Octoberfest for that and used what I needed and drank the rest. When I smoked the brisket I also did some baked beans in the smoker as well as smoked corn on the cob.
Well time for me to head out lads. Tim I will get you the recipes when I get home. Biggest thing is low slow and moist cooking. I also have a dedicated smoker so it does better.
Now that would rock. I have seen some of the Dodge guys do that with the Sterling badge.

Yeah, when I pulled that 26' trailer cross country with the X, I was averaging 8mpg The mountains where killer with an 18K total weight. What made it worse was it was a bumper pull.
bet the scales werent fun lol... i still havent decided if i want a tag or a 5th.. both seem to have their advantages and disadvantages... people seem to like 5ths for backing up to park with and supposedly more stable to pull..
the tag alongs can spread the better with distribution hitches.. and if ya broke down more likely to find someone able to pull it somewhere..

Id go with a Gooseneck if it were me. Doesnt take up all the room in the bed and handles better than a tag. Also easy to backup. Can pull as much as a 5 though, but still gets you up to 20,000 or so which is plenty for most people. The reason I have the tag is I dont own a truck with a bed and dont want to limit myself. Id hate to have a trailer I couldnt pull.

id like a 5th just cuz itd make me feel more like a trucker lol.. bad thing is id have to have a place to keep it too.. which i dont around here.. would prolly have to rent storage at one of the campgrounds.. i doubt id get it to the house... even if i did i wouldnt be able to get it next to the house either..
