I carry one of those double propane cookers...you know the type you use for turkey fryers?...anyway I carry one of those in our camper.

Except I use the "low pressure" propane line coming off the regulator in the RV...that gets me low BTU but I also carry a heavy (~35#) cast iron griddle that fits over the two burners...I use that griddle for everything!...and having the low pressure gas is not a big deal...well unless there is serious winds like we had on the Outer Banks...but I can typically block the wind with some of our chairs around the cooker to keep the heat going.

I cook all of our breakfasts on that thing and then can flip it over and use the "grated" side to cook quesadillas on and give them nice "grill marks!"...

I prefer to cook outside the camper to not heat it up or get all that grease in there...

We've used that griddle for many a meal!

I also have some cast iron pie irons that I make all kinds of stuff in...breakfast egg sandwiches, dinner/lunch pizza pies, and dessert...OMG...the stuff I come up with to stuff inside them like pie fillings and brown them and sprinkle powdered sugar on...YUM!!!

I haven't gotten into the dutch oven cooking yet...but have a very good friend that we camp with that does excellent dutch oven meals!

I'll have to go against the grain and say that I don't have much use for cast iron cookware. Don't care for it myself. A good dutch oven might be an exception, but even for that I've learned to line an aluminum dutch oven with aluminum foil and it works every bit as good as cast iron, with less cleanup mess. Lift the foil out, wipe off the ashes, and you're done.

Almost forgot - there is one great use for yard sale cast iron skillets. Target practice. Stick the handle in the ground and shoot out the centers.

I was never a big fan either Bill...but when I got this heavy cast iron griddle and I can do all kinds of meals with ONE griddle...it made my life easy...you have to remember I am limited on what I can easily haul in the RV...so having one griddle and one cooker...makes my life easy...that combo makes breakfast, lunch and dinner!

I'll use the burner to make ziploc bag omelets...have you ever tried those?...I was skeptical at first...but now...MAN what a way to go!...

Here's a photo of my setup cooking dozens of omelets at the SAME time at our last Excursion Diversion a couple of years ago!!!





BTW...there is obviously NO cast iron being used in these photos...

I've heard of those, but I don't know how to make one. Fill us in please?

Joe,

They are really very simple...

What's cool about them is that you can feed lots of people ALL AT THE SAME TIME and everyone gets WHAT THEY WANT!

First...get a box of quart size ziploc FREEZER bags...go with the brand name bags...don't skimp here...don't ask how I know...LOL

Next take a sharpie marker and write your name on the bag.

Have all your toppings pre-made in bowls...bacon pieces, sausage cut up, onions diced, tomatoes diced, mushrooms cut up, spinach cleaned, cheese shredded, you name it...prepare it before hand and have it all in bowls.

What we've done at the gatherings is have everyone bring the toppings and we'll supply the bags and eggs...but you can have everyone bring everything if it is an outting or something...

But get the bags ready with your name and get the toppings ready for use.

Next put whatever toppings you want in the bag...don't over over do it...put in what you like...

Once the toppings are in there...take 2 eggs and break them out of the shell directly into the bag...

Don't put 3 eggs as it doesn't cook that good...if you want more just make a second 2 egg omelet

Zip the bag closed and squish away to break the yoke and mix everything together.

Next step...carefully open the bag...slowly roll the bag from the bottom pushing all the air out and then zip it closed.

Place the baggie in a bowl waiting for everyone else to get their omelet made up in the bag.

Have the water boiling (notice I used two fairly large pots of water for how many omelets I was making...there were well over 30 omelets in those 2 pots)...

Once all the omelets are made and air squeezed out of bags...drop them into the boiling water.

They need to cook for 13 minutes...keep them stirred if there are many like I have or you will get some that are half cooked...so take your tongs and move them around periodically...

Once the 13 minutes are up...pull them out one by one...call off the persons name...have them bring you a plate...use a pair of scissors to cut the zip part off and a little pillow of omelet will just come out in one piece onto their plate...and whalla...you can feed many people all at the SAME time!...perfect every time!

Hey Nathan, have you tried heating that Dutch Oven and rubbing salt in it? We've had pretty good luck with that method.

Today's Gail's birthday, so we're going out for dinner tonight. Hadn't had a Happy Meal in a long time, looking forward to it

Independence Day is often a time for fireworks, barbecues and family as we celebrate the founding of the United States. But beyond the celebrations, this holiday should serve as a reminder to all of us that these privileges are not easily earned. For some 236 years we have enjoyed the freedoms won by our nation’s founders and preserved by generations of soldiers, sailors, airmen, Marines and Coast Guardsmen.

On this 4th of July…everyone should take a moment today to reflect on the sacrifices made for us to enjoy such an amazing country and celebrate yet another birthday in this great nation of freedom!
