Don- By any chance does the truck seem louder at idle when this is happening? slight jet exhuast tone? I wonder if the mans EBPV might be sticking, and then releasing when enough backpressure builds to force the butterfly open.
I too may be over anylizing this, but, back when I had an EBPV on my truck I may have experieced the same symptoms.
There might be something wrong but I have to agree it's just a stock truck. I had my truck in stock not to long ago when I took it to the stealership and I about got run over pulling on to the main road. I forgot what gutless wonders these huge trucks are without a programer/tuner in them.
If there is something wrong with it, I hope you figure it out soon and that it is a simple/cheap fix for you.

With that said, I still think something is not right because I can put it in 2nd gear, lug the heck out of the engine and it will pull it right up with no lag.

Brandon, it's not any louder than usual and no jet exhaust noise. Well like you all are aware I do have a "stock" truck and I'm thinking that may be just it. And it is an AT with 3.73's.
Like Cris said it's kinda gutless when pulling out somewhere. When these trucks don't have any add-ons like tuners, chips, exhaust, intakes, etc there just not going to launch off the line.
Unfortunately I don't have the finances to do any of those things and it may be a while before that happens. Right now I have more issues with my brakes. See my other post "Turning the wheel". But if you guys still think there's a problem then lets brainstorm a little and I will start checking everything you mention.
OK, stepping back for minute.
3 seconds is a long time as stated, but if waiting for immediate response is expected it may seem like 3 secs. Might want to consider the thought.
With that being said, my 2002 is a "drive by wire" from the pedal to the injector. I believe yours is a 2000 not sure when they went that way. I notice the difference but it is really subtle. If yours is "drive by wire" there could be some programming issues delaying the response time. And in the electronic state of our trucks, who knows?
If you have a good relationship with a local dealer, stop in and ask them to check you software date and maybe they will bring you up todate with the most recent factory software programming. Its normally in their best interest to do so.

Right at the 3 second mark the truck starts grabbing and takes off.
I never thought about that "drive by wire". I don't have it in good with any dealer at least where I am now. Don't know of any good one either. I don't know of too many specialty shops that deal strictly with diesels here in So Cal. Diesels are not the norm around here.
Would I just look for the cable or is it even visible? How would it cost to have the software updated?
