Rain & snow flurries in the forecast , it might be a white Christmas after all , my grandson should be thrilled, after feeding Cows that is , hopefully the Elk herd is back in the pasture, they came through a couple weeks ago so it’s bout time again , they chase the cows off so monitoring that situation while feeding, nothing like feeding the forest animals too 60+ head of Elk consume ALot of forage .
Rob from the City, Good looking ribs, so what the trick? I've only cooked ribs once and they didn't turn out all that well.
Preheat oven. Make sure that your roasting pan is deep enough that grease doesn't spill out into the oven. 1 or 2 racks of ribs will cook at the same time. You can cook 4 racks with 2 pans. I use salt and pepper. You can use whatever spices you like.
Use a rack to elevate the ribs off the bottom of the pan. Cover with foil. 300 degrees Fahrenheit. 3 hours. Take foil off. Brush with sauce. 15 more minutes to finish the sauce. Remove from oven and rest at least 30 minutes before cutting.
The "rain" was nothing more than a few sprinkles. Which is good because it would have limited my ability to do the volunteer work at church today.
I am in the mood for a mushroom and cheese omelet. Unfortunately, the cheese is in the freezer. So, I will have to wait for it to thaw.
Anyone visiting relatives this Christmas? I'm staying home as all my immediate family have passed away. I have a nephew in Arizona, but we are both are too broke to make the drive to visit. Maybe by next Christmas I will trust the POS enough to drive 600 miles.

Thanks, but I am okay. Not one for going out much anyway. The truck is technically running, and the trans works, and brakes, etc., Some of my credit card bills will be paid off early next year which will give me some breathing room financially. Then it is just a matter of time before I can get caught up on the truck upgrades/fixes I want to do.

Beef ribs are on the menu for Monday Night Football. Technically, what I have is a plate of chuck ribs. Not the plate ribs from under the prime rib roast. So it's the 2, 3, 4, and 5 bones. Not the 6, 7, 8, and 9 bones. Slow roasting on a bed of onions, carrots, and celery. The star of the show will be the pan drippings.
