I caught it was an Excursion, but only because I took the link to YouTube direct where I could see it full screen on a 17 inch laptop.
the one thing I kept looking for, and never did see, was a Battery Voltmeter so "we" could see when the Glow Plugs cycled off.
I think that is very important, and for me, it is the single determining factor as to when I hit the starter....
I wait for the battery voltage to start to recover by about 2/10s of a volt or more.
In this video made about 4 months ago, I show the DVM and waiting until it starts to recover... roughly 40 seconds into the video the DVM is going down to the lowest point, then it recovers and the engine starts
Not mentioned in this thread, what weight oil is in the engine? I have found that going to 5w40 full synthetic makes a huge difference in now fast it cranks and starts up, and the idle smooths out fast.
Running 15w40 in it, won’t run anything different. I use 15w40 for everything so it simplifies the oil selection I keep on hand.
I’ll get some fresh diesel in it and put a volt meter on it. I’ve got a spare GPCM to swap in if I need to.
IMO I don’t think it is the injectors, I could be wrong but the truck runs pretty good, doesn’t smoke and has good power. Throttle pedal response is a little slow but it has been like that for 10 years.
At those temps after setting overnight I would expect a little more of a drop in voltage but it's hard to say without knowing how many amps the plugs are pulling. If the batteries are brand new and fully charged the 11.5 could be about right. I'd guess at least half of them are lighting up though. Now if the batteries have got some age on them and there's some kind of parasitic draw pulling on them all night, which is getting more and more common as the years pass, then the 11.5 would be high and I'd say the plugs aren't doing much.

I won’t try to change your mind, but do want to share my experience.
My previous OBS had over 300k. The 5w-40 made a HUGE difference in cold weather startups, even in the garage. The conventional would heavy lope for a while after starting, but the thinner synthetic cleared it right up.
I do think it would be worth your while for a test over the winter months (call it science). The hassle of a different oil for this one vehicle would be cheaper and easier than other repairs IMHO. Obviously the decision is yours though.
Filled it up with diesel and a heavy dose of Diesel 911. Drove it around, warmed it up real good, and ran it kind of hard. Starts a lot faster now, still a little rompy when it’s cold (15-20 degrees) but I can live with it. It needs an oil change, might switch to 5w but we’ll see.

do the Rotella T6 5w40 full synthetic, it will make a believer out of you.
it has the highest rating by the "OIL GEEK" for all around performance.
Maybe try 5W40 T6 or possibly an ICP sensor? I’ve never heard a 7.3 romp on cold start and mine never has. Some rough running cylinders from a weak glow plug or two for a half minute maybe.
