I made Chinese food for lunch. I'm Chinese . If I make it, any food becomes Chinese food. A stir fry with ham, sweet peppers, carrots, bok choy, and bean sprouts. Along with mango and the very cheap avocado. Unlike restaurants where they give you a little bit of meat, with a lot of veggies. I use a lot of meat, with less veggies.
The grocery store advertised salmon as being on sale. The regular price is around $17 per pound. That's really expensive for farm raised fish, with pink food coloring added.
I'm convinced that the prices are artificially inflated to make us think that we are getting a deal with the sale price. My receipt says that I paid about $13 for a piece of fish. Still expensive. But there is no way that anybody is paying $36 for that piece of fish.
The cast iron griddle is big enough to cook the whole piece of fish. It also allows me to cook the skin side to a crispy texture. Just like blackened red fish. Good eating. Not so good to look at. Nobody likes looking at a fish with blackened skin.
Not a big fan of salmon myself. I like the cheap stuff. 44 fish sticks for $5.00.
I received a whole chicken this past Saturday at a local church's food drive. Now I just have to decide how to cook it. In February, I received a 5 pound tenderloin ham. I still have most of it in the freezer as it tastes like turkey, not ham. Maybe a generous amount of BBQ sauce will keep the chicken from tasting like turkey.
Debone it. Make stock with the bones. Roast the leg and thighs. Deep fry the wings and drumettes. Grind the breast for chicken nuggets and chicken patties.
With a whole ham, I usually debone it also. The ham bone makes a great stock. The skin, fat, and trim pieces are really good for cooking beans. Like an animal, I will sit there and eat whole chunks of ham when I watch television. If you cook rice, add cubed pieces of ham to the rice cooker. Ham and pineapple are good for Hawaiian fried rice. Make ham sliders with those little Hawaiian buns.
I like Salmon and I like it the way you cooked it. My wife not so much, she will eat a small piece of Salmon from time to time. She likes Cod, we bought a case of it a while back, divided it up into 1.5 lb. packages and vacuum packed it.
I like seafood . Probably more than landfood. Salmon has a unique richness. Probably due to the fat. Cod is a more familiar white fish and most people are more familiar with it. So delicious when dipped in beer batter and fried. Last week I beer batter and fried shrimp heads. Fresh shrimp are so expensive that I never waste the heads. Seafood in general is expensive. I can't afford it on a regular basis. It's like a treat for special occasions. It shouldn't be. I guess it cost more to catch fish, than it cost to raise chickens.
There are still places where they ask you to wear a mask. "Please wear one of our fresh masks, while you're in the building." I had to ask the girl, if she wanted the mask back when I left the building. On the way out, she says, "Please keep the mask on, until you are outside. Then it's yours to keep." Wow. A souvenir. I asked her, "would you freak out if I just took it off right now?" She leans in close, whispers in a low tone of voice, so that other people don't overhear. "Are we still talking about the mask?"

It's almost Egg Hunt Day. Hams go on sale for that occasion. Like you, I still have some ham from the last occasion. I put some of that to use today. Rice, beans, ham, tomatoes, carrots and onion. A 1 pot meal. Throw everything into the pot. Just press the "cooking" button on the machine. The tomatoes and onion sort of melt and disintegrate. I don't know if it's Rice & Beans, or Red Beans and Rice. But I'm Chinese. I made it. So it's Chinese Food.
I had to go into Kaiser the other day for a minor procedure. I needed to wear a mask for the duration, and I did not question it. In fact, I had been scheduled for 10 AM, but got bumped up to 7:30 AM because the two people scheduled in front of me got canceled for positive COVID tests.
COVID ain't done with us yet, regardless of what we may or may not think about it.
Well, according to the food stamp people, the pandemic is over, and they have stopped the emergency food stamps because of it. And we all know that the government would never lie to us. LOL
