I’m replacing the tranny in my ‘03 7.3 and wondering if there is another job I should take advantage of while it’s out?

Definitely reroute your engine valley drain. (mainly stick) The factory valley drain goes right onto the clutch. So if you have a fuel leak you are dumping diesel onto the clutch. Same with oil of course! Would be a good time to look at U-joints, and check all your wiring going to the transmission making sure nothing is rubbing. With the transmission out it's also a lot easier to get at up-pipes and whatnot. So if you were wanting to make the system better you could put some bellowed up pipes on!
I see now that you said it was an auto. The first bit I wrote dosen't apply to the auto trans😅
The up-pipes are easier to do with transmission out, but it’s still another project. The biggest advantage is being able to remove the bolts from exhaust manifolds to up-pipes. If not able to tackle an additional project, consider just replacing those bolts.
The procedure with transmission removed is still basically the same. The advantage to no transmission is the ability to have a helper line up the collector to turbo while installing the clamp.
Add some under cab sound deadening to transmission tunnel
The OP has a 2003, which came from the factory with the large under cab sound deadening panel in the lower transmission tunnel, that spans the width of the cab almost from frame rail to frame rail above the transmission.
The 1999-2001 trucks did not come with this foil covered fiberous panel under the cab, but 2002 and 2003 models did. Even the lowly XL models. So that is one less thing to do on the OP's list.
Mishimoto tranny cooler is a nice upgrade and lifetime warrantee'd for about $100 more than the Dorman 6.0 cooler. I agree with the up pipes while the tranny is out of the truck as well.
I already purchased the mishimoto tranny cooler but yes good advice… I know myself and once that tranny goes back in the last thing I want to do is take it out again to do a repair I should’ve done while it was out!
