greetings all from North Carolina. Recently reported aboard my new duty station here in Elizabeth City, NC. If a person can handle the political landscape and the expense, Cali is a very beautiful state to live in.
Coming from The City, my expectations for Italian are high. I grew in Chinatown. Right next to North Beach, which is known to some as Little Italy. Just like in New York, the Chinese ghetto & Italian ghetto are located side by side. So as you can imagine, my idea of Italian is fresh ingredients, hand made pasta, and even the sauces are made from scratch. Some restaurants still do it that way. You see them rolling out sheets of pasta and cutting it by hand. Same way you see them form the ***** of pizza dough, and then hand tossing them in the air. Cioppino made with live crab, and clam chowder made with live clams. Cesar salads made tableside, where they actually use garlic peeled & crushed in front of you, with a fresh raw egg. This was back when the good restaurants had open kitchens, so that you can see what they are doing, and see them make everything fresh from scratch.
On the bright side, you guys can always drive down to San Jose or up to San Francisco. We live in the land of fresh everything. Look around. We can have fresh milk, cheese, eggs, meat, and produce, all year around.
Just remember that any mediocre food you get out here on The Left Coast, is probably still better than what people eat in The Mid West where vegetables come in cans.

My 1st working trip out there, we were booked into a "residence inn". I think it was a Marriott. Motel with a kitchen. So excited. I can cook. Won't have to eat fast food for the week. Got into the OJ Simpson Hertz rental car and found a grocery store.
