You can run the transmission as high as 220F ALL DAY LONG with no problems. You can go as high as 250F for no more than a half hour at a time. Chances are you won't get to these temperatures.
Just got home. The truck ran beautifully. EGTs got up around 1150 - 1200 going up over Tioga Pass to Yosemite. When EGT got up there, I just backed off on the accelerator a little and it would drop right back down, usually staying well below those temps. Transmission found the sweet spot for RPM on her own. I used Matt's unlimited tow tune (gearhead). I was amazed at how cool she ran, actually. On the way home we took a different route and there were a few good grades as well. Ambient temps were around 104* and the truck pulled the hills like a dream and stayed nice and cool. I think the highest oil temp was around 129*, though I didn't really watch too closely as I had the alarm set for overtemp.
Thanks again for all of the advise.
