Did you put the probe after the turbo or before the turbo? I'm not sure if you have a 6.0 or 7.3 but i know the "normal" readings for the 6.0 guys is taken from the drivers side manifold.

Those are after turbo temperatures, i have both and towing i have seen 850 after and 1200 pre turbo with a 8k tow tune.

The probe was installed just before the turbo in the Y pipe. The mechanic that did the head gaskets and upgrades installed it when it was apart.
