Any egt over 1200 is getting dangerous and can start to melt aluminum components. That being said it has to be sustained at over 1200. Many high performance guys see spikes of 1500 but never let it stay!
Your engine temps seem normal, what you REALLY need to watch is the spread between oil temp and coolant temp cruising at 60mph fully warmed up. If you get a spread between the 2 of 15F your oil cooler is plugged up.

My issue has been eating coolant and not seeing in either the oil or the tailpipe. I see it in the engine compartment around the degas bottle. I am assuming i have a bad head gasket, but dont see any loss of power or anything like that...any thoughts to trouble shoot? i will look at the banks tomorrow to add coolant temp to the gauge readout.
Post in the 6.0 section they have way more knowledge, I'm not too sure on how to diagnose head gaskets, I'm sure even google it and you will show up several possible ideas.
There are also leak points, I believe it's somewhat common for the heater hose to chafe and leak coolant towards the rear of the engine
