I just bought the edge cts insight and have been looking at Mr eot and ect. I'm running 188-190 ect and eot about 223. Is this bad?
Yes.
Your coolant is where it should be. Your oil is way too high. Ideal is within 5*F of the coolant. Real world and different speeds may see it be up to 9*F spread.
Tomorrow morning if the truck has been off for over 12hours, verify that the coolant, oil and tranny temp are all pretty close if not the same.
That'll rule out the sensor being broken. Otherwise you have a clogged oil cooler.
There are a number of threads on here about flushing the oil cooler.
If I recall, there is a point at which the flush is just not effective, that might be where the spread is 30*F like you are seeing.
I think the flush is effective when the spread is smaller, and even then I don't think it is a fix, rather it buys some time.
I haven't done it, but it reads like it is an involved process, quite time consuming. You can do the swap yourself if you are handy. There's plenty of posts on here that'll walk you through it ... check out Senior Master Tech on youtube. The cooler itself is not too expensive, it's the labor that gets you.
If you can do it yourself, that is where you decide if the time spent flushing is worth the cost to just swap it and be done.

There are others on here who could give you some great advice on this, better than I could. Try starting a new thread with the temp difference in your oil and coolant. I think you'll get more traffic and eyes on your story than this thread about the Insight gauge.
There are a few places online to get the oil cooler from: Tousley Parts and Parts Guy Ed.
Consider pricing it from your local dealership too. When you press them and build up a relationship too, you can get competitive prices from the parts dept, especially considering shipping. Plus once they know you they can be helpful, especially for this type of repair if you've never done it.
As for driving it like this ... try that other post like I mentioned. Get some knowledgeable guys to chime in, but I believe sending that hot oil to the injectors can't be good. Also, the coolant can boil and damage the egr cooler, than HG's will be the next issue.
The others who chime in will offer suggestions on what else you might want to consider replacing / upgrading while you are that far into the engine.
