1300 (pre-turbo) is where you should let off, or seriously think about letting off. The aluminum in the pistons will start to change shape if you run that high for very long. Some of the guys that run pulling engines run higher than that, but only for short runs.
If your EGT is higher than that, you need to start looking at why.
if i have my chip on 140 extreme at 65 and put her to the floor by the time she reaches 104 mph at 25 psi boost shes runin 1500 at the back of the left manifold but when im pullin i can barely run chip on the 50 setting i know 7.3 are known to have higher egts than like a cummins how do i get it down to a safe so i can pull heavier harder and on like 75 or 100 setting ???
What kind of intake and exhaust do you have? (Stock or upgraded) You need to consider that the engine is a pump. If you are not getting good airflow, your EGT's will be higher.
Running tunes that are not meant for towing or running the "extreme" tune you will have higher EGT's. In order to effectively run high HP tunes, you need a better flowing turbo and a way to get the air in and out of the engine faster.
I can tell you in the 40hp tune on my DP tuner I can get the egt to over 1200 to. So you just need to back off a little. I have lots of power it just get high egt's going up large hills. Now mine was pretty much stock set up at time with cat and E99. But it was a fully loader toy hauler also. Learn to manage rpm's and watch egt's and pull away or be prepaired for engine failure.

If there are no leaks, than you are running more fuel than air, Change turbo, and intercooler, up pipes, throw the warm up butter fly, EBPV over in the corner some where, get it to breath, clean your S&B filter, get live tuned, reburn etc.

well you have the right stuff. As mentioned, make sure your filter is clean then after that I would be looking for boost leaks. I would start with your up-pipes. You mentioned that they were leaking down the bottom which is fairly uncommon. Check all your bolts for tension.and check that the manifolds are sitting flush. Most up-pipe leaks are at the top behind the turbo.
When you floor it at 65 does it take long to hit 25psi. Is she blowing alot of black smoke.

In my 140 aggressive if I floor it it will shoot up to 1500 but if I take my foot out of it for a second and then floor it again the EGTs will drop to a nice 1150.
IH (the people who made our motors) say 1250* for sustained. You can go over that for what ever time you feel safe. Its about heat soak...
Examples...
Pulling a trailer for hours on end at 1100*... Go to pass and hit 1400*. Its going to take a lot less time to do damage because the piston core temp was already in the 900* range.
Running empty at 650* for hours on end, go to pass and rod it up to 1500*... You can hold it there along time without worry of damage.
Every stroke of the piston brings in fresh cool air, every stroke of the oil pump sprays the bottom of the piston with "cool" oil...
