Impossible question perhaps but what's the most common cause of CEL on these trucks?

No mods, no history of drivetrain trouble.
Last service 1 month ago. 27k miles. Cold weather is only recent change.
About this time last year there was a big issue with a P164A code and bad NOX sensors and calibrations. Not something that was a big issue, but it caused reduced power until the issue was corrected. Some went months before Ford figured a fix for it, and it did no harm.
I would say don't worry too much about it and get it to a dealer as soon as it's convenient. If it was something serious the wrench light would likely come on and the truck would go into limp-home mode. Sounds like yours hasn't, so it's likely something simple and relatively innocuous.

When cold weather set in last year I got a CEL. Don't remember the code, but it had to do with EGR. It cleared on its own. This happened twice. That is all...
I got the code checked and was advised of NOx sensor in need of replacement.
A service bulletin was described. Interesting since I just had the truck in 5 weeks ago. New bulletin? This is for the part, not the software flash.
CEL just came on in my 2011 f250 6.7. Just my luck, service department is already closed and won't open tomorrow cause of holiday.
Just a CEL. No loss of power or any other indicators. I'm getting from this thread that I'm fine to drive it for the next few days till I can get it in.
The CEL is pretty much always to do with the pollution controls on the truck. Anything from DEF to NOx to EGR etc. you should be able to drive without any issues. I have driven around periodically for the past year with a CEL for the DEF system.

Eh, I'm not sure that I would agree with that. While the OBD systems were mandated by the Feds for emissions purposes, there are a number of things that could be wrong with the way the engine runs that aren't emissions related.
IIRC Rickatic had a bad injector that revealed itself with a CEL. Once I checked my air filter and forgot to plug in my MAF sensor and was greeted with a CEL. It may be emissions related but it certainly doesn't have to be.
