There should be a VIN plate on the drivers door or on the door frame. Ive also read of the VIN being stamped on a couple different spots on the frame itself, one spot being kind of below the alternater. Other spot im not sure of. As for IDing the engine at a glance, there is no real good way of telling the differance between a 390 and a 360 just by looking at it. Best way would be to use the wood dowel trick and measure the stroke without having to tear the engine apart.
The VIN is stamped on the frame in two places. The first, the one that you can see, is on the top right (passenger) side frame rail. It can be anywhere between the radiator support and firewall but is, as Mauch1 said, most commonly inline with the alternator.
It can be lightly stamped and be difficult to find/see.
The second hidden VIN is also on the top right frame rail, located under the cab, usually about 8-12" behind the front cab mount.
