I'm gonna be doing the same thing on my truck shortly. Wheel Vintiques has a pretty good selection of 16" 8 lug rims. If that's what you're looking to do. And I don't see why you'd have any issues, but if you ask them, they're pretty helpful and I'm sure they'll tell you if they won't fit.
I had 15" wheels on my 71 f250 4x4, you shouldn't have any issues with 16". Even with disk breaks you would be fine, and most 8 lug wheels will fit, except super duty wheels because they went metric on the pattern.
Yes, a few companies still make them, mine were fair priced for the set of chrome nuggets. The other set were pretty heavy duty and they cost a little under $400
On my 72 Highboy the problem with 16" wheels were if you don't have the correct offset, the inside of the rim will hit the tie rod end's. I found out the hard way, luckily my dealer just switched them for ones with more offset. I ended up with American Racing wheels, here they are on the unfinished truck. So just make sure you have enough rear offset.
Mine were like the wagon wheels on the classified page, I think between 3&4 inches, if you go to buy them in a shop they should have a fitment tool to determined exactly how much or little bs you need
