Well you'll probably want the F350 blocks (4") in the back to make it level if it's like my '05. The spacers seem to work fine and I use mine for a Trophy Truck chase truck in Baja.
I run the 5150 series Bilstiens as there are the next level up. I beleive Fox builds Icon's shocks and they are good as well. I don't think I'd trust Rancho springs (flame away) but that's just my experience.
It really depends on how hard you're going to use your truck.

Typically the 250's are relatively level but seing as you have the diesel you should only need the 1.5" kit to level. If you go the 2.5" route you may be on the hair edge of needing/wanting to raise the rear as the 2.5" kit may bring you a little high in the front.
Many of us do this as a mini lift as installing the front leveling spacers in the front and the 350 blocks in the rear.
IMO if your not going to 4-wheel the rig or see anything short of pavement and have a light wallet go with the spacers. I bought the same spacers from top gun but wanted to mimic the Readylift system with the polyurethane spacers. If you dont have some type of insulating means between the spacer and the trucks upper spring mount you may encounter some knocking at times plus it gives a piece of mind on ride comfort.
They have the spacers sold seperately and you can get the Bilsteins probably a little cheaper at shockwarehouse but typically have to wait for them.
I think the readylift kit is a nice heavy duty kit with everything you need unless your stuck on the bilsteins you can scrap the shock extension brackets.
Remember to think out the project and how much you have to spend. If you go the 2.5" top gun route consider costs for adjustable track bar or drop bracket, pro-alignment, tools etc..
If you have the money and may off-road i would prob. go with the icon kit or similar proggressive rate kit.
Here's a little bit of further info for you.

I just put the Bilstien kit on my truck, and its nice. Got the truck back from the alignment shop and all was well, right in specs, just a minor toe adjustment.
Also the rear 5100 shocks are on back order everywhere so be prepared for that, and it wont come with the 4" blocks you need for the 250.
I paid 346.00 for the kit from allshocks.com
