Would a chip on a 500hp engine override that unintentianally?

No the older chips do not mess with that since it is in the pcm. I know they can if you ask them too.. LOL

What about a possible failing LPOP not getting enough oil around the engine?

Failing LPOP means no oil to the HPOP means truck won't run. Greg's LPOP was new when the motor went in this fall so I doubt thats the problem.
