SkySkiJason came up to ol' Kaintuck for a visit and brought his AE scanner so we hooked it up to my truck to check the relationship between Engine Oil Temperature and Engine Coolant Temperature.
We let the truck warm up at idle (1000 rpm) for 15 minutes with outside temperature of about 40 degrees.
After 15 minutes, ECT was 120* and EOT was 67*.
After driving in town 2 miles, ECT was 134*, EOT was 130*
After driving on the highway an additional 2 miles, ECT was 180*, EOT was 180*
Seemed to be a one to one relationship between ECT to EOT after 2 miles, in my truck. Your results may vary. Just a little information (possibly useless, which I am full of! ).
That's pretty good, but in the summer after you get it good and hot after driving it for more than a few minutes you'll probably see the EOT shoot to over 200 degrees while the ECT stays at 180.
It gets over 100 here, and hot-******* around, as you say, it's still been maxed at 192 or 193. That's odd. Before my 6.0L trans cooler, the trans would get that hot, or a little more. AFAIK, my EOT has never been over 200.
