With one side done the center of the wheel well is now 41in and the other side is 39.75 in.. I thought with 2.5in longer shackles it would lift the truck more than 1.25in, I was hoping for almost 2in.

My 2.5 shackles lifted my truck up over 2" and from looking at your picture compared to my leafs on my truck mine are pushed down more causing the front to lift. I don't any pictures of just the leafs but here is a before and after.
I've got the 2.5" shackle from Sanderson Welding, and an add-a-leaf kit on mine. I started out with only the add-a-leaf, and the 35s rubbed really bad. I added the shackle and here is what it looks like now. No rubbing at all, even with Nitto Mud Grapplers
