So i got my pyro probe on my right side up pipe, and i hooked all the wires up as shown. I took the power from a hot wire under the dash that only supplied power when you turn the key on.
It idles at about 300 or a little under, but when i floor it, it will jump right up to like 1200 or so in the red bigtime. But then once i back out if goes down again and runns around 600 or so, i think, at normal driving. I guess thats normal that it will jump into the red when i hit the gas real hard or do i have a problem somewhere.

That sounds about right. I see you are running the bully dog. I hear those run pretty hot.
Also, 3.5 inch exhaust is a little restrictive and the stacks don't help any either. I run hotter with 4 inch turbo back to 5 1/2in stacks than I did with factory exhaust and muffler delete.

I got the same gauges as you but i tapped at the end of the manifold just before the up-pipe and i get a 300 on idle, 600-900 running 55 to 70 with fluctuations of the pedal. Sounds like your within range...
