Why did they stop? Just curious. And could a guy drill and tap a plug?
They stopped to save money. The drilling, tapping, cost of the plug, and labor to do it, spread over all the vehicles that had them, added up to quite a bit of cash.
You could drill and tap your own. Just make sure to do it where you don't hit anything inside, and don't get any chips in it, either. I don't know how to tell if you will hit anything inside, there is no gaurenteed clear spot and it's really hard to see through the cover. You might also have to rebalance the torque converter if the drain plug weight doesn't equal the weight of the removed metal.
Yeah.. I'd have to do some serious reading.. there's a general theme about V5 is ok, but there also seems to be implications that all the Mercon be removed. I'm going to drain pan and TC, so I'll have a couple of Qts residual. I guess using Mercon is the safest bet, and next change I can switch if I have time to read ;-)
I have 240K on my Ex. Two times in the last two years, I had my transmission flushed twice. Once a year. The truck will run better and it makes the tranny last longer. I have used Royal Purple religiously and I notice a difference. I am sad to say that I am going to have to sell my Ex and Monday is my last day. Sad to say. I will be back in the Excursion club as soon as I can afford it.

Some questions about ATF change (Mercon->Mercon V):
1. Which methods are correct for fluid change (after removing the transmission drain plug and draining the transmission fluid):
Method 1. Apply the break(pedalbreak or handbreak). Start the engine and run it at idle speed for five minutes while shifting through all shift lever positions.
Method 2. Start the engine and run through all gears for a total of five minutes at idle.
- Is idle enough to mix fluids? Or middle speed better?
- What is better: running with break or without break?
Method 3. Start the engine and run at MIDDLE speed through all gears for a total of five minutes.
- Can middle speed (instead of idle) damage the transmission?
2. Is 5 minutes enough to mix fully new fully ATF with old ATF?
3. How many times do you recommend repeat this steps?

None of those steps are correct. I don't understand why you WANT to mix old and new fluids. That doesn't make any sense to me.
Follow the instructions the F350-6 posted. That's the way to do it. One caveat, though. The instructions are a bit out of date. MERCON V has replaced MERCON.
