A regular cab shouldn't be too heavy, 2 people should have no problem lifting it. I manuevered an extended cab onto a trailer by myself, but I wasn't concerned about damaging it either. 
You dont have to do both sides at the same time, just loosen the bolts and lift one side at a time, then you can use a jack and some wood blocks to hold it up.

you are correct on the tire size they are to big. i just started this project we learn from our mistakes got the tires cheep but my f-150 with a 302 struggles to get me to work. i'm in the process of changing them out to some 35-12.50's hope that will give me some of my power back, we'll see i guess. to lift the cab i used the screw jack sitting on a big wooden block. did one side at a time, loosen all the bolts before you start jacking it up with a little effort you can find a place whwre it will balance pretty good. poor boy got poor boy ways.
