My understanding is that when the OD light flashes the tranny is not operating properly and that is its version of a warning light. I am not sure if the changes in its shifting is the tranny going into a limp mode since its throwing a trouble code or if there is something else going on. I am sure somebody will add there opinion soon and give you some more info.

Flashing OD lamp means you have failure codes stored.
Have them pulled with a scann. Your trans has problems

shifts change cause transmission slips, ect and and your computer tells it to up the line pressure in order to try to compensate. raised line pressure makes "hard" shifts.

Not all codes will limp the trans.
But yes in limp it will raise the EPC as a saftey.

90% of the time it's the Rear Antilock Brake Sensor (RABS) on top/center of the rear axle that causes this to happen. It feeds a digital signal to the Programmable Speedometer/Odometer Module (PSOM) that tells the PCM when to shift the trans. No signal or erratic signal puts the tranny into Limp-in-Mode...flashes the OD light and shifts hard enough to give you whip lash.
Remove the sensor, clean the fuzzy crap off it, re-install, check the wiring too for corrosion ect, reset the PCM by pulling #22 & #9 fuse under the hood & turn key to run, then off. Replace the fuses, see if the trouble goes away. If not, get the codes and post them here.

From his other treads his problem seems to be in the RPM surging. This would indicate a possible slip. If it were a surge in the speedo i would look into the VSS system. This is not the case.
You can disconnect the neg. battery cables and reset the computer until it happens again.
My truck was doing this and it was the T/C slipping. So you may want to get it checked out soon.
