Well I have a 79 F100 that originally came from the factory with a 300 Straight Six and a three on the tree. I say a 460 because parts are readily available for cheap and there is no replacement for displacement. Might as well go big now if you are planning on a new motor.

yah 300s are good motors but you just cant get the rumble and the power like a big v8.but no doubt the 300 do have pretty damn good power.it surprised me when i got my first truck with one in it
I really enjoyed the 300 when it was in the truck. The only problem was with the transmissions. The three on the tree crapped out so I put in a 4 speed and hated it. Took the 460 out of our old tow vehicle (custom 6 door 1979 F350 limo truck) to replace the 300 and now upgrading to a 514 and building a 557 for a few years down the road.
I have a 351M in my parts truck. Bill, numberdummy, says that engine has some major problems. To stay away.

I have a tired 330HD in my truck, currently and will be swapped out for a 360 that will be rebuilt to a 390. I don't care of making skid marks or burnouts or revs. More of a heavy hauler with a heavy foot.
It really all depends on what youre looking to do with it. Will it be a hauler that doesnt need to be fast? Do you want it to go fast? Does MPG matter to you? These kind of questions will really steer you in what kind of motor best suits you.
Something to watch out for is the difference in weight between engines to much could mean changing front springs as well and then theres the whole bell housing bolt issue i dont know wich eng match the 300
