If you are talking about a F350 SRW, then really no difference if you were towing with a F250. You get less rear sag from the F350 because of the 4" blocks out back...compared to the 2" blocks on the F250.
Now...if you are talking about a F250 .vs a F350 DRW...then YES...the DRW F350 is much more stable towing. However...with only 7k in tow...not much benefit.
IMHO...you can easily go with either F250 or F350 for your needs and love the truck. Keep in mind...that the '08MY...have a higher GVRW than the previous model SuperDuty.
Good luck...and enjoy the heck out of your NEW SD!
I was just going to talk about this. I had a 250 and now the new 350 srw. I just hooked up to a 14500 lb load, a boat that is 50 foot on the trailer total and towed about 500 miles. I did this once with my 05 f250 v10 and it was horrible and hard to do. This time was a breeze and felt like towing the normal boat a 30 footer of about 9000 lbs. It barely squatted the truck and there was no sway, with the 250 it maxed out the springs and swayed a lot. I think there may be more involved than just 4" spacer blocks. Either way with 7000lbs you will be fine with either but I know this new diesel made the trip a breeze too, 70-75 mph the whole time with no problems.
Outlaw350 -- Did your '05 F250 have the Camper package? That adds the over-load spring...and anti-sway bar in the rear. That is the only thing...I can think of that would cause the F250 to be so different in the way it handled that weight.
It is hard to compare the '08 to the previous models also. The rear springs on the '08 are longer and supposed to offer better support while empty and loaded. These minor changes make the SD a totally different beast...IMO.
biz, yeah it had the camper package. I don't know what it is but I used a hitch that was 3" lower this time around, and there was no sway. Whatever the reason, I will take it.
Unless you are going to upgrade to a heavier boat or trailer in the future stick with the F250. It is more than capable of that weight. The ride of the empty F250 is also a bit better.

I stepped up from a 2004 F-250 crew cab, short bed and was towing a 10K trailer up to a 2008 F-450 crew cab, long bed. Lost about 4mpg...But I do have the 488 gearing and I drive it easy. I always want more truck than I think I'm going to need because later when I get a larger trailer I wont have to worry about the weight...Planning on getting a 15K trailer soon....If I was you I'd get a F-350 DWD and the wide front axel. I can turn this F-450 around inside the shadow of the F-250..It is amazing how much shorter this turning radius is. The truck rides better than my F-250 (shocking) and is much quiter that the F-250....This truck is a great product. The only thing I wished I would have done was wait on job 2 and got the backup camera and the tire pressure monitoring. (Not sure if it is offered on the DWD trucks) The other thing I wish I had was the step on the tail gate....I may add that myself.
