The studs are stainless and soft, thus easier to shear off. A regular metric grade 10.9 hex bolt will have a much higher shear strength than the OE studs and will be less likely to break.

Exactly. Which is why I used zinc-plated (galvanized) grade 8's for my headers.

Beware. With my past experience with aluminum heads, using grade 8's might just elongate the holes in the head
