when i paint my truck, which is a standard cab long bed, i am going to start with a gallon of single stage and then if i need more, ill buy some more...i also am going to be painting my camper top. depending on how many coats you put on, a gallon may be plenty.

I am new to this site and do not want to stir any trouble, but why would you guys want to use single stage paint? Base coat / clear coat is easier to spray in less than perfect conditions and can be fixed easier (wet sanding and buffing). The cost may be a little more but the benefit is far greater. Hope this helps.
I guess it depends on what kind of look you want and how much money and time you want to spend.The acrylic enamel paints without metal flake in them can be wet sanded and buffed out with good results. I like the look of base/clear but for certain budget jobs single stage has its place.
for a decent looking truck that may take a beating every now and then (after all, a truck is a truck) single stage may be the perfect answer.
and yes, single stage w/o the flake can be buffed and it turns out quite purdy.

I am going to try to paint my 93 F150 longbed and want to know how much paint will be needed for single stage? Would 1 gallon be enough?
Also, I'm not removing the old paint, just sanding a little. Do i need a sealing primer or a self-etching primer?...what's the difference?
A primer/sealer is just that, it promotes adhesion yet acts like a sealer and is typically put over etch primer. On the other hand etch primer is used on bare metal its a primer that contains an acid which etches into the metal increasing adhesion. You should be fine w/o primer, if I understand what youre wanting to do correctly you just need to scuff the current finish until there is no gloss and spray over that.
