My friend has one and I have have played with it. I love that little thing. Toss out your questions and I'll see if I can answer any, and I'm sure others will be able to answer them if I can't.
I am hoping someone here is real good and I could call them soon, and do some real time problem solving with the software open on my screen and theirs…how good would that be.

I'm not sure I understand your problem. You have one computer with iTunes and two iPods, right? Are you trying to put different sets of music on the two iPods, or the same music on each? Are you getting an error message, or just can't get it to do what you want?
Or are you considering buying another iPod and want to know if it will work how you want it to?
I'm not very familiar with the iPod synching of iTunes, but I think I saw on the Apple website that you can have different preferences or something for different iPods. Look in the Tools>Preferences (I think that's where it is in Windows) under the iPod tab.
Also, you can check out www.ilounge.com there is a lot of information there, although it loads real slow for me.
My apologies …I did not make myself clear, however you hit it, spot on…one computer and two I-pod’s, different music for each…PLUS it will not let me select the music I want to up-load.
Seems the only way is when I connect it.......it up-loads what ever is new, now I know it is something I have done…ug…now you know my problem…
Dock the iPod with the computer, and select the iPod in iTunes (click on the iPod in the "Source" column so that it is highlighted). Click the iPod preferences button at the bottom of the window (looks like a little iPod). In iPod preferences, you have the option to Manage iPod manually. Make sure that is selected. Once it is selected, you can drag songs and playlists from your library to the iPod manually. Make sure you do that for ALL of the iPods that you want to manage manually.
Once you do what Josh recommended and choose to manage the iPods manually, you will also have to manually "Eject" the iPod's from the computer each time you want to physically disconnect them. Do this by right clicking on the same icon in iTunes that you used to select manual control and clicking on "Eject".

As mentioned above, YES you can do what you are asking about.
My son and I do it all the time - we have different Ipods and different tastes in music.
We each use the same Itunes software and manage to keep our music seperated.
If you aren't successful, come back and we'll figure it out.
