We went through the effort of getting an old (yet good) COP and swapping it out one at a time. The #6 COP was the one causing the trouble and as soon as it was replaced, the problem disappeared. So... we put a new COP on #6. I'll be putting several hundred miles on it in the next week and will take the spare with me. If hasn't completely resolved the issue, I'll let everyone know.
Interesting Note: ALL COPs showed to be good via resistance check. SOMEONE needs to come up with a method of testing them with significant current so it can be determined when breakdown is happening!

Update #2: This morning, my wife, daughter and I took our RV in for inspection. The Expy was misfiring almost the entire drive there. I have a feeling that the COP that I switched from cylinder 4 to cylinder 1 may be failing under heavy load. I'll have to bring it over to Auto Zone and see if any codes have registered. When it was misfiring, the SES light was blinking, but did not stay on solid afterwards.
Congratulations to JCDrew on resolving your problem. I'll keep everyone updated with mine. The Expy is no longer my primary vehicle. My wife and I purchased a 2004 Hyundai Elantra last week to use for running around town with.

Update #3: I brought the Expy to Auto Zone....misfire on cylinder 1, meaning that the coil pack is bad. I bought a new coil pack while there and will install it shortly. I'll update again soon.

Update #4: Hopefully, this will be my final update. This morning, I installed the new COP on cylinder 1 and we drove to pick up the RV. It towed home very smoothly. I got approx 8-10 mpg (via instant mpg on trip computer). The Jayco Kiwi 23B hardly felt like it was there. This was my first actual trip towing the RV since we bought the Expy last August and didn't go camping afterwards.

Final Update - COB #6 was bad. After swapping them one at a time, we finally got the bottom of the problem. I took my 98 Expy on vacation last week and it never hesitated, even through mountain passes. Wow.. we've all learned a lot from this... Take care.
