Trying to figure this out myself. I haven’t figured out how to disable it at all in my 2021. When I come to a stop, I stop well back and creep forward to keep the motor from shutting off.
You can obviously just push the button to turn the system off, but some people don’t like doing that so often. You can disable it via Forscan which I do in this video here:
I just push the button as soon as we take off. But yes, creeping forward will keep it running as well as a slight turn of the steering wheel.
I've tracked my mileage both ways and I think it's a load of crap that it saves fuel beyond a negligible amount. I've seen Ford techs online swearing for it and about it.
--must be off for 7 or more seconds to save gas as it takes 7 seconds of gas at idle to start the engine. (count it out--not a lot of 7 second stops most of the time)
--EPA mileage tests are said to gain 1/10th of a MPG. This is also reported by independant tests
--My cousin has a Subaru Crosstrek. He's had it about 18 months. The meter shows him how much time off due to AS/S. And how much gas saved. He's saved about 1.5 gallons.
I know that the computer calculates that but I wonder if it takes into account the 1 or 2 second stops that actually increase gas usage. (stop for 2 seconds, use 7 seconds worth of gas to start)
I just hit the button as part of the start up routine, just like checking the AC and radio volumn.
Guess I’ll need to get Forscan as I have stuff on my F350 to change as well. Is it user friendly? I’m not as good with computers as I used to be and don’t want to mess anything up

Very user friendly, and as long as you follow along with the video above you shouldn’t mess anything up. The biggest thing is saving backups.
