It's quite possible that the parking brake is engaged. You would be able to tow it like that, with some resistance but could be overcome by a tow rig. But when trying to turn by hand you couldn't budge it. Did you notice the drums getting hot? It's possible that you have a bad seal or wheel cylinder that lubed the drum. Making it an easier tow but still to stuck to turn by hand. What differential do you have?
It’s not the parking brake lol. I’ve removed the drive shaft entirely and the yoke is still locked up. I’ll be pulling that and checking out the rear output bearing later today.
If the pinion / bearing is locked up and the rear is a non-limited slip, wheels off the ground you should be able to turn 1 wheel and the other should turn the other direction.
If the wheels do not turn and the pinion either there is something going on with the read end.
Is this a 9" or something else?

Not the brakes based on the fact that you disconnected the driveshaft? It seems like you still have not removed the brake drums and are unwilling to do so.
Well, I’ve discovered that I did not really know how these things worked very well. The transfer case was in two high, which is why I could move the front drive shaft with my hand but not the rear. I’m just glad I realized that before I started taking out the transfer case.
