That cable must have been stretching/unraveling a bit under full load and preventing the throttle from opening all the way.
I spoke with a coworker who rebuilt an OBS, and he said the same thing happened to him.
Maybe you should take 30 seconds to crawl under the dash and pop that cable off for a look-see (no tools needed)
**As a side note, I've only had the truck for a year. I've done lots of work thanks to the guidance in these forums, including the 5 Liter Tune-Up - and I was very disappointed that the tune-up didn't make much of a difference. I've changed my mind - this truck is finally fun to drive! I've put about $3k into it this year and a $25 cable made the most difference.
i have replaced/repaired at least 25 over the years, 6 on my own trucks. a small nut and a large pair of channel locks to crush the nut on the cable works to get you going for a short while till the cable can be replaced.

Get one person in the vehicle and floor the gas peddle, check under the hood that the throttle plate is fully open.
I haven’t done this, but I do feel that mine is stretched.

Gee, that sounds like what happened to me with my 5-spd '85 T-Bird Turbo Coupe. I was sitting at a stoplight with the clutch in, the 1"-long 'barbell' clutch cable broke, and I lurched forward to hit the car in front of me. Oops. No damage to either car though....
