Looking for help determining the model year of a Ford F600 single axle dump truck that we have. Based on the cab bodystyle I think its in the 73 to 79 range.

You didn't post a picture of the entire warranty plate , so IDK which transmission you have (AT540, C6, or MT). Still, only four carb part Nos. left for '73 w/330HD (out of ~20 for all the '73/79 330s):
The first two are the Autolite ("Ford") 2100 ("F-2"), the last two are the Holley 2300 ("H-2"). LMK if you want the illustrations (exploded views) of either.

I have no idea what was on it but it would have been factory from 73 when my grandfather purchased it new. I know it was a manual choke.
Someone broke in last fall and stole it. We are trying to get a new one before spring. My understanding is that the autolite were sometimes problematic, would a Holley 2300 be the best option?

I think both the Autolite and the Holley work well in this application. All were manual choke, and sat on a velocity governor that fits between the carb and manifold. I see more Autolite carbs on the 330 than Holley.
