Thank you, the lack of fuel injection parameters and general oddness of a non OBDII truck with a OBDII connector is why I decided to post this question.
I was hoping to be able to record IPR duty cycle measurements and such, not just mechanical fuel pressure to help pinpoint my issue.
If AE was in stock I would totally buy it, but really hoping there is another option that's reliable.

Sous has it right. Forscan is THE best there is for streaming and recording live engine PID's. If the PCM can see it Forscan will show it to you. Also preforms all available self test and will even bleed the ABS system. I've got AE and Forscan both and hands down prefer the Forscan. The user controls learning curve is considerably better, probably because is intended for the general public not dedicated mechanic shops. Plus it is specifically designed for Ford and affiliate engine management systems.
Edit: IPR DC% as well as ICP, EBP, EOT, TFT, MAP, MAT, IAT, Injector Pulse Width, Mass Fuel Desired and many many more are all viewable w/ the Forscan software and a compatible OBD2 dongle.

Perfect, that is what I needed, thank you. I will download Forscan.
As udsuth78 said, all of that and more is well within the wheelhouse of FORScan or FORScan lite.
Below are a few examples of what you can do with FORScan or FORScan Lite.
Use the PID Charting Tool in the link below to make the wall of text that a data log is look like the graph below with easily identified PID's and values.
You can take screen shots or keep a data log as a "good running condition" for future reference if you need to compare apples to apples during an issue.
Visual aid:
If your feeling froggy and want to see the graph lines and screenshots come alive, you can make that happen too.
