The front disc brake conversion I did on my 66 F100 with 70's parts are noisy . The pads chatter between 20 to 40 mph. Press on the brake a little and it goes away. At first I thought it was just because they were missing the small anti-rattle spring at the bottom of each caliper on the outboard pads. However, after adding those the brakes sound the same. Any ideas on what I'm missing here?
I'm not sure what you mean by chatter exactly, but it seems to me that if you resurface the rotors, pack and adjust the wheel bearings, clean and lube the hardware and pads EVERYWHERE there is metal, contact, except the friction materiel, it should take care of it. If not, I would be looking at caliper alignment or rather misalignment due to a bent bracket or spindle maybe, and looking at the pistons retracting as they should, not holding a pad or two against the rotor. possibly the friction itself. If all else fails, try a different brand of brake pads.

Not sure what type you have, but many early disc brake systems had an inline pressure fitting usually on the 4way that kept just a little, a fuzz of pressure on the pads, so the pads would not rattle back into the caliper and the system would have dead space between the rotor and pad when cornering or until the brake was hit. That is perhaps your rattle.
