I just bought a part struck same exact truck with a 150000 miles on it and I'm terrified I might have hurt it. I Couldn't see the buttons on the scanner and accidentally hit clear codes and it immediately died
I was wondering if it didn't shut off when you did that. Other than shutting down, I hadn't heard of anything getting damaged by doing that. Did it start back up?
Some of these trucks are sensitive like that. My buddy had an 02 like mine and I killed it that way as a prank. His look of terror made me feel guilty. Mine is fine under same conditions. Maybe since mine has ferrite beads on the chip cuz of HIDs.

Any codes come back? P1000 is normal after clearing the codes.

If you have no pedal response try hitting the pedal sensor with a load of contact cleaner. Let it dry up then see if it works.
Things do get nasty under the dash over time (how many people clean under the dash besides the floor?).
Over time the throttle response sensor (I think that's what it's called) and/or connector gets dirty and sometimes a good cleaning will clear things up.
If you do not have adjustable pedals then you can buy a new sensor pretty cheap and replace it. If you have adjustable pedals it cannot be replaced so you have to buy the whole pedal assembly which is $$$.
