Overheating paranoia
The exhaust crossover heated the intake under the carb and was used back in the day to help insure the fuel stayed in suspension on a cold/colder engine and not pool in the intake. The exhaust cross-overs really are not needed on today's fuels unless you are operating in temp below 15°F-10°C You basically were reading near an exhaust source so it's surprised the reading was that low really.
You just can't ***** nilly pick a spot to read engine temps. For the intake you read just in front and behind the carb and average the 2 Cylinder heads front of the head. Engine block a core plug Oil pan center of pan underside.

There are no stupid questions. Your engine, by everything you have provided, is actually running quite cool and actually cold for some stuff.
